1 1/2poundflank steak
1eachonion, sliced
1eachgreen pepper, sliced
1eachred pepper, sliced
1eachjalapeno, sliced, remove seeds
1tablespooncilantro
1eachgarlic, clove, minced
1teaspoonchili powder
1teaspooncumin
1teaspooncoriander
1/4teaspoonsalt
8oztomatoes, chopped
12eachflour tortilla
1sour cream, for topping
1cheddar cheese, shredded, for topping
1salsa, for topping

Directions:

Cut flank steak into 6 portions. In a crockpot combine meat, onion, green pepper, red pepper, jalapeno, cilantro, garlic, chili powder, cumin, coriander, and salt. Add tomatoes. Cover and cook on low 8-10 hours or high for 4-5 hours. Remove meat from crockpot and shred. Return to crockpot and stir. To serve spread on tortillas top with toppings and roll up tortilla.
